During summer 2020, I embarked on an exciting journey with Ric & his wonderful team at Symphonia Gin, Woodlab Distillery, Moy. The goal was to produce an exquisite Apple Gin Jam, exclusive for Symphonia. I’m pleased & proud to announce that after many hours in the kitchen & several test batches later, we have succeeded in producing a fabulous, bespoke Apple Gin Jam, the taste & scent of which evokes the essence of Symphonia’s No2 Apple Gin. Symphonia, like The Lush Larder, are very passionate about supporting local: This Jam is made with local EU PGI Status Bramley Apples and is laced with juniper, lemon & Symphonia Apple Gin. It is a great in cocktails & baking and can also be used as a glaze or marinade. Symphonia Apple Gin Jam is available exclusively on their website www.symphonia.com and at their distillery tours & their soon-to-open Gin School in 2021. As a chocoholic myself, imagine my delight when the very talented Rauraidh & Lisa@northcoastchocolates decided to use my Damson & Apple Jelly to create a magical new flavour for their bespoke artisan chocolate boxes. I love everything about these guys from their sustainable packaging, their ethos, their collaborations with other local artisans and, not least, their delicious, ethical chocolates! SYMPHONIA GIN: HANDMADE FRUIT CUP JAM
Huge thanks to the fabulous team at Woodlab Distillery for commissioning me a 2nd time to create a special Jam based on the flavours of their delicious Fruit Cup. This deliciously sweet Jam is made with local raspberries, strawberries and Pink Prosecco.
